½ kilo bacon, sliced thickly into cubes
½ kilo ziti
2 tablespoons olive oil
½ cup fresh peas
1 small baby cabbage, sliced thinly
½ cup mushrooms, halved
4 anchovy filets, drained
½ cup Parmesan cheese
Ground black pepper
In a frying pan, fry up the bacon over medium heat until it is crisp and brown. Put the bacon on a paper towel to drain the oil and put the bacon on the side. Throw out the fat and wipe the frying pan clean with a paper towel.
In a large pot, cook ziti (follow the package instructions). Heat up the olive oil in the frying pan over medium heat while the pasta cooks. Add in the peas, baby cabbage , mushrooms, and anchovies. Cook for 10 minutes, mixing constantly.
Beat the eggs in a bowl. Then, drain the cooked pasta and mix the eggs with the noodles until the noodles are completely coated in the eggs. Add in the bacon and vegetable – anchovy mixture and mix around well. Add some sprinkled Parmesan and pepper and serve immediately.
Makes about 2 kilos.
