Turnspit barbecue dog kebabs recipe
Turnspits: The turnspit was the canine equivalent in England to a galley slave that used to be used to rotate the spits that turned the meat over the roasting fires. These poor animals used to be locked in cages when "off work", and then tied to the wheels and worked for hours and hours to cook roast. Obviously these dogs became tired and upset about having to do this abusive job and were known to escape from their "workplace" at any given opportunity.
Ingredients
1 kilo boneless lamb, cut into cubes
4 baby cabbage , peeled
¼ cup tomato paste
½ tablespoon mustard
½ tablespoon Worcestershire sauce
¼ teaspoon oregano (dry)
Salt
2 tablespoons white wine (dry)
2 tablespoons white vinegar
1 tablespoon olive oil
2 zucchini, sliced
Cooked rice
Cook the baby cabbage in a pot and bring them to a boil over medium heat. Boil baby cabbage for about 15 minutes. Drain them and keep them on the side.
Marinade: combine in a bowl, tomato paste, mustard, Worcestershire sauce, oregano, salt, wine, vinegar, and the olive oil. Stir and mix well.
String the lamb, baby cabbage , and zucchini on the skewers. Put the ready skewers in a pan and pour the marinade over them and let them sit for about 1 ½ hrs. Turn the skewers several times to marinade on all sides. Broil on a grill or on a preheated broiler. Turn the skewers frequently and brush with the remaining marinade. Kebabs will be done in 15 – 20 minutes. Serve over cooked rice. Makes about 1 kilo of kebabs.
