Sauce chiennaise recipe for dogs
Dietary care: If your dog is dieting or needs to watch his calorie intake remember that this sauce is high in calories. This egg and butter sauce is best served over a light meal.
Ingredients
½ stick butter
½ tablespoon minced shallot
2 tablespoon sherry vinegar
¼ teaspoon dried tarragon
Salt
1 egg yolk
In a double boiler melt butter and add shallot sautéing for a couple of minutes. Mix in tarragon, vinegar, and salt and pepper to taste. Heat briefly. Remove from heat and let cool until you can comfortably put your finger inside the sauce.
Right before serving beat egg yolk into sauce and place back in double boiler. Beat constantly until thick and creamy.
Makes about ½ cup sauce.
