Eggs and truffle recipeTruffle dogs: These dogs were once used to find this very expensive and rare delicacy that grows near the roots of oak trees. Truffle dogs are thought to be descendants of the poodle. Truffle dogs are well endowed with an astonishingly keen nose. These dogs used to dig out the truffles for the fungus by lifting the truffle to the surface with their forefeet. Most of the master's of these dogs were hunting thieves; therefore it was to their advantage that the dogs be kept quiet since most of the truffles were located in big estates. These hunting thieves used to prize their truffle dog with a portion of their cheese and bread, of course the truffle, stayed with the poacher. Ingredients 8 eggs 4 tablespoons non salted butter 1 cup milk 1½ cup dry white wine Salt Pepper 1 truffle (white or black) Beat eggs in a large bowl until well mixed. In a frying pan, heat the butter over medium heat until the butter is brown. Reduce heat and add in the eggs and cook, stirring constantly with a spatula. As soon as the eggs are ready, pour in the milk and mix well. Add in the salt and pepper to taste. Put the mixture into the dog's bowls and grate the truffles over the top of the eggs.
